Pancakes are perfect for Saturday mornings; when you have the time to make sure that they turn out alright. Here is a quick simple guide to make the perfect pancake.
Ingredients for 12
• 280 g flour
• 20 g baking powder
• 9 g salt
• 20 g white sugar
• 445 ml milk
• 2 eggs
• 65 g butter, melted
In a medium-size mixing bowl or large glass measuring cup, whisk together the dry ingredients (flour, baking powder, salt, sugar).
In a separate bowl, whisk together the wet ingredients (milk, eggs, melted butter) until the egg is broken up.
Add the wet ingredients to the bowl with the dry ingredients. Stir them together until all the flour is mixed. Take care not to overmix, as this makes the batter tough.
Turn your stove to medium-high heat and place a large skillet or griddle on the burner. Add oil to pan. Moisten a paper towel with vegetable oil and use it to lightly wipe the bottom of the pan. This will keep the pancakes from sticking.
Pour the batter into the pan. For each pancake, gently pour 1/3 to 1/2 cup of batter into the pan, using a ladle or a measuring cup. Use a spoon to spread the batter into a circle.
Once bubbles begin to pop in the pancake’s center, it’s ready to be turned. Insert the entire spatula under the pancake’s middle. Lift the pancake quickly about an inch off the pan’s surface and flip it over.
Serve while warm with maple syrup or any other topping.
